¼ cup meringue powder

Sift the powdered sugar and meringue powder together into a mixing bowl. With a mixer running at its lowest speed, slowly drizzle in ½ cup water, mixing constantly until the icing is completely smooth. Cover with plastic to keep the air out, as it dries quickly!

You can divide the icing and add the colors of your choice to smaller portions. We like to use gel colors, which you can order online or find at bakers’ specialty stores. You need very little gel to color the icing—just dip a toothpick in the color, put it in the icing, and mix the icing to distribute the color, adding more color as needed. Be sure to wrap the icing in plastic if you’re not working with it, because it starts to harden quickly.

There are so many different ways to use this icing to decorate, from spreading it to piping it in patterns or layers. Let your imagination run wild and have fun!
